Beef vermicelli soup

Ingredients:

500 grams of beef, a handful of vermicelli, 1 star anise, 7, 8 peppercorns, 5, 6 slices of ginger, 2, 3 pieces of green onions, 3 tablespoons of cooking wine, appropriate amount of salt, 1 spoon of light soy sauce, appropriate amount of curry powder , Appropriate amount of chopped coriander, appropriate amount of shallot

Practice:

1. Cut the beef into large pieces and boil it in cold water (1200 ml). Skimming blood

2. Add ginger slices, green onions, star anise, pepper, cooking wine, and bring to a boil.

3. Turn to low heat. Simmer for 50 minutes

4. Turn off the flame. Remove star anise, sliced ginger and green onion. Add 2 tsp of salt and stir well. Let it cool and put it in the refrigerator overnight.

5. Skim the surface oil slick the next day. Bring to a boil again and remove the beef slices.

6. Put in the vermicelli soaked in advance and cook for 1, 2 minutes

7. Fill the bowl. Pour light soy sauce, sprinkle with curry powder, sesame oil, chopped coriander, chopped green onion
