Products Introduction:
 
Bonito flakes are made from Skipjack, also known as Katsuobushi. After the removal of the head , tail, and fish bone, only take out the abdominal muscles behind. Steam but not boil the fish (boiling may loss the nutrition of the fish and hard to do the next process). After the fish is cooked, charbroil it with firewood slow fire for more than 10 days, While the water is evaporated to dryness, the fish will become dark appearance, hard steak like wood. Then use machine or planer to shave the fish into thin slices. After these work have been done, bonito flakes will be made successfully.
 
The Uses of Bonito flakes :
Dashi or Bonito fish soup stock is used as a base seasoning for almost all Japanese soups, broths and stews, and also can be used to cook miso soup, udon/soba soup, sukiyaki, and so on.
