Tie Guanyin is a premium variety of Chinese oolong tea associated with Anxi in Fujian province. Tie Guanyin produced in different areas of Anxi have different characteristics. The tea leaves are curly, almost ball-like. The color is a dark brownish green. Once brewed, the liquid of good Tieguanyin should be a beautiful amber color while inferior tea yields a dark brown color. Speaking of the flavor, Tieguanyin is arguably the most naturally aromatic Chinese tea. It has a penetrating floral scent but well balanced by a slightly bitter taste which morphs into a sweet aftertaste.

We have tried many oolong teas and this one is the best. it has a complexity that makes it our favorite. It is a bit floral and very smooth. Not a very strong oolong/fermented flavor -- again, this is what we prefer.

 

 

Description

 

Oolong tea is a traditional Chinese tea (Camellia sinensis)produced through a unique process including withering under the strong sun and oxidation before curling and twisting. Most oolong teas, especially those of fine quality, involve unique tea plant cultivars that are exclusively used for particular varieties. The degree of oxidation can range from 8% to 85%, depending on the variety and production style. Oolong is especially popular with tea connoisseurs of south China and Chinese expatriates overseas.

A widely used ceremonial method of steeping oolongs in China is called gongfucha. This method uses a small steeping vessel, such as a gaiwan or Yixing clay teapot, with more tea than usual for the amount of water used. Multiple short steeps of 20 seconds to 1 minute are performed; the tea is often served in one- to two-ounce tasting cups.

If stronger flavor is desired, add more tea, not time. Highlighted teas will taste bitter if infused longer than the suggested time.
