Molecularly distilled monoglycerides are a mixture of glycerol monostearate and glycerol.
Molecularly distilled monoglycerides are white waxy
flakes, beads, or powder solids that are insoluble in water and can
be dispersed in hot water when mixed with strong shaking. It is one
of the few food additives identified by the FDA and the FAO and WHO
as not being restricted for use and is currently the world's most
consumed edible emulsifier.
Purification of monoglyceride includes raw materials,
esterification, filtration, neutralization, glyceride formation,
glycerol, first molecular distillation, second molecular
distillation, and monoglyceride.
