Process:
Raw material selection → washing→ peeling → acid and
alkali treatment → crushing→ juice extracting →
filtering → homogenization → deoxidation → sterilization→
canning → cooling → finished product.
Selection of raw materials
Select fully mature, fresh, good flavor, juice rich, no pests and
diseases of fresh fruit, maturity after maturity.
Ii. Raw material pretreatment
1. Cleaning. After the raw materials are selected, wash with clean
water to remove the hair, rinse
with solution or detergent solution, remove pesticide residue,
rinse in clean water, and
drain.
2. Soak color protection. Cut half the core of the raw material
into 0. 1%. Soak the color guard in a mixture
of ascorbic acid and citric acid.
3, heat beating: fruit under 90 ℃ to 95 ℃, the heat for 3 to 5
minutes, softening, through
aperture 0. A 5 mm beater pulps to remove the skins.
4. Flavor adjustment: the fruit pulp after previous treatment shall
be adjusted to increase
flavor. Adjust when adding sugar, citric acid and l-ascorbic
acid
5. Homogenous degassing: homogenization is to evenly disperse the
fruit pulp particles
suspended by the juice into smaller particles, so as to
increase the stability of the fruit juice and
prevent stratification.
