PURPOSR:

 

Professional sharpening set for metal and damask kitchen knives. The set includes a water sharpening

 

stone and a sharpening angle holder. A water stone is meant for sharpening the knife and the polishing

 

the sharpening angel of the edge. One side possesses the abrasive grit of #1000, the other one has

 

#3000, which lets to sharp the knife using only one instrument. The portable rubber platform safely

 

protects from sliding.
 

The sharpening angel holder with the ceramic guides provides for the angel of 15-30 degrees depending

 

on the width of 2 cm is 30degrees. The wider the blade is the less is the angle.

Instruction:

 

Soak the stone in the water for 5 minutes, and then put it on a steady platform. Sharpening the knives with

 

one or two steps is decided by the degree of blunt tool.

Step 1: 1000 grit coarse grit, used to repair the seriously damaged edge, suitable for blunt knives.

 

Hold the knife at an angle of 15 - 30 °, grind the edge on the surface of stone back and forth with gentle

 

pressure, and sharpen it until the edge sharp enough.
 

After sharpening the tool, it needs to be honed with coarse grinding after half a year. Also depends on the

 

specific situation.

Step 2: 3000 grit fine grinding, a necessary step to eliminate burrs of the edge.

 

Use more gentle pressure, repeat step 1, and repair the edge until smoothly and keenly.

General speaking, use it once a week to keep your blade sharp.
