Materials and methods for making doughnuts
Ingredients: 200g high gluten flour, 25g egg liquid, 4g yeast, 110g milk, 25g
sugar, 2g salt.
1. Heat the milk to about 40 ℃, dissolve the yeast, and let it
stand for a few minutes. Mix all the raw materials evenly, add oil,
knead into dough, and knead for more than ten minutes until the
expansion stage.
2. Put the dough bag in a warm place and ferment to twice the size.
Take it out and exhaust the air. Relax for 10 minutes. Roll the
dough into a 1cm square cake. Use the mold to print the doughnut
shaped cake embryo on it. Put it into the fermentation tank for
secondary fermentation for 40 minutes (set temperature: 35,
humidity: 65). The specific fermentation state depends on the
specific fermentation state, that is, gently press it with your
finger. If it does not rebound, it means that the fermentation is
not in place. If it bounces quickly, It means that the fermentation
has been excessive, and only when it bounces slowly can the
fermentation be considered as good.
3. When the oil is 70% or 80% hot (at 180 ° C), put it into the oil
pan. After the fierce reaction, fry the opposite side for about 30
seconds, and then start the pan to filter the oil
