Konjac gum is a water soluble hydrocolloid obtained from the konjac
flour by aqueous extraction.Konjac flour is the unpurified raw
product from the root of the perennial plant Amorphophallus
konjac,after purified and removed of starch,ashes,fiber,alkaloid
and other impurities,will obtain konjac gum.The main component of
konjac gum is the water soluble high molecular weight
polysaccharide glucomannan with content of 80-93% on air-dried
basis.The products could be widely used in food processing industry
for the purposes of jelling, water sbsorption,plasticity,dietary
fiber,film
forming,thickening,emulsifying,suspending,stabilizing,visocosity.
