Propylene glycol alginate (PGA) is a food additive with excellent performance, which is prepared by deeply processing alginic acid extracted from natural seaweed.
The PGA is white or lightly yellow powder and soluble in water. The aqueous solution of the PGA is viscous colloid. The PGA is very stable under the condition of the pH value of 3 to 5 and has a function of preventing the PGA from reacting with other multivalent cations. Therefore, the PGA serving as an emulsifying agent, a thickening agent and a stabilizing agent is widely applied to acidic food, particularly acidic beverage products,and has an application effect which cannot be substituted by other additives.
